Honey Ginger Carrots
Cooked carrots with a light honey ginger glaze.

carrots

butter

honey

teaspoon
freshly grated ginger
or ½ teaspoon ground ginger
coarse salt
Instructions
Carrots
Peel carrots. Cut into pieces if using larger sized carrots.
1 ½ pounds carrots
Boil carrots in lightly salted water until soft.
Strain carrots and set aside.
Glaze
Melt butter in a pan along with honey and ginger.
2 tablespoons butter,
2 tablespoons honey,
1 teaspoon freshly grated ginger
Stir lightly for 1-2 minutes over low heat until melted.
Pour glaze over carrots and swirl gently so butter mixture coats the carrots.
Gently place carrots on a serving dish and sprinkle with coarse salt
Notes
Try to choose similar sized carrots so they cook evenly.
Cooking time will vary depending on the size of your carrots.
Once carrots are cooked, they will be soft and can break apart. Handle gently.
Serve carrots while hot.
Garnish carrots with freshly chopped parsley or carrot tops!
