Cilantro Lime Dressing
Salad dressing made with Greek yogurt, fresh cilantro and lime juice and a touch of jalapeno pepper.

cup
Greek yogurt

jalapeno
seeded and chopped
½
teaspoon
salt
¼
teaspoon
garlic powder

Tablespoon
olive oil

Tablespoon
lime juice

teaspoon
sugar

cup
cilantro
Instructions
Place all ingredients, except cilantro in a food processor. Process until smooth
1 cup Greek yogurt,
½ jalapeno,
½ teaspoon salt,
¼ teaspoon garlic powder,
1 Tablespoon olive oil,
1 Tablespoon lime juice,
1 teaspoon sugar
Add cilantro and pulse 5-6 times until mixed in, but still can see bits of leaves
¼ cup cilantro
Pour into a glass storage container and serve or refrigerate until needed
Notes
If your yogurt is runny you can use it as is, or you can strain off any excess liquid from your yogurt.
I've used a half of a seeded jalapeno. If you like it spicier, add the whole jalapeno. Use less if you'd like it milder
Use fresh squeezed lime juice
Store in an air tight container in the refrigerator for up to two weeks
A small amount of sugar is added to help balance the flavors. The sugar may be omitted if desired.
