Mix flour, baking powder, baking soda and salt together in a bowl
2 cups flour, 2 teaspoons baking powder, ½ teaspoon baking soda, ½ teaspoon salt
Add butter and combine butter into flour mixture by rubbing butter and flour together with your fingers
5 Tablespoons butter
Add cheese and toss lightly into flour mixture
1 cup Pepper Jack cheese
Add buttermilk. Mix lightly with a fork, just until it comes together.

Lightly knead dough together 10-12 times.
Place dough on a board and form into a large circle. Pat dough to ½″ thick and cut out with a round cutter. Use scraps to reroll and cut additional biscuits.Place on a baking sheet lined with parchment paper or lightly greased.
Topping
Brush each biscuit with buttermilk and top with shredded cheese
2 Tablespoons buttermilk, ¼ cup Pepper Jack cheese
Bake in a preheated 450 degree oven for 15-17 minutes
Notes
Number of biscuits will depend on size of biscuit cutter and how thick you rolled the dough. Average yield is 6-8 biscuits.
Tips for making great biscuits
Use cold butter cut into small pieces
Knead dough 10-12 times to finish mixing all flour into biscuits
Pat out dough with your hands onto a board or counter
Lightly wet hands to help prevent dough from sticking to your hands
Push dough cutter straight into dough. Don’t twist cutter or your biscuits will rise unevenly
Bake on a baking sheet lined with parchment paper or lightly greased
Make certain oven is preheated to 450 degrees before adding biscuits
