In a bowl combine brown sugar, pepper, and smoked paprika.
¾ cup brown sugar, ½ teaspoon black pepper, ½ teaspoon smoked paprika
Wrap each smokie with a piece of bacon.
Roll smokie in brown sugar mixture. Then place on a baking sheet lined with foil with the seam side down.
Use remaining brown sugar to sprinkle over the top of the smokies.
Cover and refrigerate for 1-2 hours.
Bake uncovered in a 350° oven for 30-40 minutes until the top of the bacon is crispy and the brown sugar has melted.
Serve hot or at room temperature.
Notes
Use a Rimmed Baking Sheet - These smokies release a lot of grease while they are baking. A rimmed sheet helps prevent a mess in the oven. You can also use a large casserole dish.
Foil - Lining your baking sheet with foil helps with an easier cleanup.
Use Thin Sliced Bacon - Save the thick-sliced bacon for breakfast! This recipe works better with thin slices of bacon. It cooks quicker and wraps around the smokies more easily.
Spacing - I like to place the bacon wrapped smokies on the tray with no space between the smokies. You can leave a bit of space if you'd prefer.
Serve hot or at room temperature - These are delicious right out of the oven, but you don't need to worry about keeping them hot. They are tasty as they cool to room temperature too!
