Notes
To make ahead:
Prepare the green beans: Wash and trim the beans, then blanch them in boiling water until crisp-tender. Immediately transfer to an ice bath to stop the cooking.
Refrigerate: Drain the beans thoroughly and store in an airtight container in the refrigerator for up to 2 days.
Toast the almonds: Toast the sliced almonds in a dry skillet until lightly golden. Remove from the pan and allow them to cool. Store in an airtight container at room temperature for a few days.
Finish before serving: Melt the butter in a skillet, add the garlic, and cook briefly. Add the prepared green beans and sauté until heated through. Stir in the toasted almonds, finish with fresh lemon juice, and season with salt and pepper.
Recipe tips:
Don't overcook the beans: Blanch the green beans just until they're crisp-tender. They should still have a little bite because they'll continue cooking in the skillet.
Drain well: Make certain the beans are thoroughly drained after the ice bath. Excess water can dilute the buttery sauce.
Finish just before serving: For the best flavor and texture, sauté the beans with the garlic, butter, and almonds shortly before serving. These green beans are best enjoyed hot.
