Peach Cobbler

Homemade peach cobbler with a biscuit topping.

Ingredients

Fruit Filling

  • 2 pounds peaches sliced
  • 1 cup sugar
  • 1/4 cup flour
  • 1 teaspoon cinnamon

Biscuit Topping

  • 1 1/2 cup flour
  • 2 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 Tablespoons butter cubed
  • 3/4 cup milk
  • 1/2 teaspoon sugar for sprinkling on top of biscuits

Instructions

  • Preheat oven to 350 degrees

Fruit Filling

  • Combine peaches, sugar, flour and cinnamon.
  • Stir until peaches are coated with sugar.

Biscuit Topping

  • Put flour, sugar, baking powder and salt in a food processor. Pulse 2-3 times to mix.
  • Add butter. Pulse until butter is incorporated and mixture is coarse.
  • Add milk. Pulse until dough is formed.

Assemble Cobbler

  • Grease a 9 x 13 inch casserole dish.
  • Stir peach mixture again and add to casserole.
  • Place dollops of biscuit dough on top of peaches.
  • Sprinkle 1 teaspoon of sugar on top of biscuit dough.
  • Bake in a preheated 350 degree oven for 50-55 minutes until topping is browned and filling is bubbly.

2 pounds of peaches is approximately 6 cups of sliced peaches.
