Black Bean Corn Salad with Jalapeno Lime Dressing

  • 2 Cups Frozen Corn Kernels
  • 1 Can Black Beans drained and rinsed
  • ½ red bell pepper chopped
  • 1 bunch green onions sliced or ½ red onion diced
  • ¼ Cup Mayonnaise
  • ¼ Cup Sour Cream
  • Lime zest from one lime
  • Lime juice from one lime
  • 1 Tablespoon minced jalapeno.
  • Salt and Pepper to taste


  • Place corn through green onions in a large bowl.
  • In a separate bowl, mix mayonnaise, sour cream, lime zest, lime juice and jalapeno.
  • Add salt and pepper to taste.
  • Mix dressing into salad bowl.
  • Stir gently.
  • Serve immediately or chill until ready to serve.


Can add additional jalapeno if you like it spicier!
