Mix egg in a bowl with a fork until scrambled. Add a dash of salt and pepper.

Heat Saute pan on medium heat. Spray saute pan with a nonstick spray.
Add egg mixture. Use a spatula to shape egg into a small round patty. Flip egg, keeping egg in one whole piece.
Assemble sandwich by placing meat, egg and cheese on bottom layer of English muffin. Place top half of muffin on top.
1 sausage patty, bacon or ham slices, 1 slice cheese
Eat right away, or wrap in foil to keep hot.
Notes
To make more than one sandwich:To make breakfast sandwiches for a group, you'll follow the same basic steps, but increase the amounts.
Plan one egg per sandwich.
Cook all eggs together and then cut into portions.
Assemble sandwiches.
Wrap in foil or parchment paper to keep warm.
Tips
Don't break up the eggs while cooking. Try to keep the egg in one big patty. It makes it easier to eat the sandwich because the egg won't fall out the sides.
May add cheese directly to the top of the eggs while in the pan. This does help promote a meltier cheese.
Make certain you sausage, bacon or ham is warmed before adding to the sandwich.
