pork sausage

canola or vegetable

flour

milk

black pepper

cooked
Instructions
Cook sausage, breaking into large chunks. Remove from pan and set aside.
1 pound pork sausage
Use a paper towel to wipe out excess grease from sausage. Leave brown bits from sausage.
Add oil and flour to pan. Cook for 2-3 minutes until lightly browned.
2 Tablespoons oil,
¼ cup flour
Slowly whisk in milk.
3 cups milk
Add pepper, salt and red pepper flakes.
½ teaspoon black pepper,
½ teaspoon salt,
pinch red pepper flakes
Cook over medium heat until milk warms and thickens. Stir often to avoid scorching.
Add sausage back to gravy mixture.
Split two muffins and place on a plate.
12 buttermilk biscuits
Ladle gravy over muffins.
Notes
Be certain to cook flour with oil for 1-2 minutes. This helps eliminate any raw flour taste.
Keep pan at medium low heat when adding the milk to help prevent scorching
Add milk slowly while stirring with a whisk to help prevent lumps
Add additional salt and pepper if needed
Garnish with freshly chopped parsley
