mayonnaise
2
chipotle peppers
with adobo sauce
1
tablespoon
lime juice
fresh squeezed
Instructions
Place everything in a food processor
1 cup mayonnaise,
2 chipotle peppers,
1 tablespoon lime juice
Pulse until smooth
Add additional lime juice if you'd like it a bit thinner
Notes
Chipotle mayonnaise will last up to two weeks when covered and stored in the fridge.
Tips and Variations
Use the adobo sauce that coats the chipotle peppers when removed from the can
For a spicier taste, add an additional pepper and more adobo sauce
Scrape out the seeds from the inside of the peppers before using
Add extra lime juice to make a pourable dressing
To make a creamier version, add a tablespoon of milk
