French Toast Casserole

Ingredients

  • 1 loaf French Bread
  • 8 eggs
  • 2 cups milk
  • 1 teaspoon vanilla
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 cups blackberries

Topping

  • 1 Tablespoon granulated sugar optional
  • 1 Tablespoon powdered sugar optional

Instructions

  • Cut bread into large pieces. 
    1 loaf French Bread
  • In a large bowl combine eggs, milk vanilla, sugar, cinnamon and nutmeg.
    8 eggs, 2 cups milk, 1 teaspoon vanilla, ¼ cup sugar, 1 teaspoon cinnamon, ¼ teaspoon nutmeg
  • Add bread and very lightly fold in so all pieces are covered with the mixture.
  • Let mixture rest for 30 minutes.
  • Fold in blackberries.
    2 cups blackberries
  • Pour mixture into a greased baking dish (9 x 13)
  • Sprinkle top with granulated sugar (optional)
    1 Tablespoon granulated sugar
  • Bake uncovered in a preheated 350 degree oven for 55-60 minutes.
  • Allow casserole to cool 5 minutes. Sprinkle with powdered sugar and serve. 
    1 Tablespoon powdered sugar

Notes

This recipe works best with an older loaf of bread. If yours is soft and fresh, just let the cut pieces dry slightly before adding to the custard mixture. 
 
Fresh or frozen berries can be used. If using frozen, do not thaw before adding. 
 
To check if casserole is cooked through, give the pan a little jiggle. If the center is wiggly, the custard isn't cooked. Pop back into the oven for an additional 5-10 minutes.
