Coconut cookies with a drizzle of chocolate. These delicious cookies are gluten free.

Ingredients
Cookies
  • 4 egg whites
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/4 cup sugar
  • 4 cups sweetened coconut
Chocolate Drizzle
  • 1/3 cup chocolate chips
  • 1 teaspoon shortening
Instructions
  1. Whip eggs with a mixer until stiff peaks are formed.

  2. Fold in salt, vanilla and sugar.

  3. Fold in coconut.

  4. Place rounded scoops of coconut mixture on a baking sheet lined with a silicone liner or parchment paper. 

  5. Bake in a preheated 325 degree oven for 18-20 minutes. 

  6. Allow cookies to cool slightly. Remove from baking sheet and continue cooling on baking rack. 

Chocolate Drizzle
  1. Place chocolate chips and shortening in a microwave proof bowl. Microwave for 30 seconds at a time, stirring after each time. Continue until chocolate is smooth.

  2. Using a spoon, drizzle chocolate over cooled cookies. Allow chocolate to cool and set-up before  serving.
