  • 1 cucumber peeled and chopped
  • 2 tomatoes chopped
  • 1 small red onion chopped
  • 1/3 cup Kalamata olives quartered
  • 1/4 cup feta cheese crumbled
  • 3 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  1. In a large bowl, combine cucumbers, tomatoes, onions, olives and feta.

  2. Combine all dressing ingredients together in a separate bowl.

  3. Pour dressing over salad. Mix to combine.
