Quinoa Waffles are a favorite for breakfast or brunch. The quinoa becomes hidden in these waffles adding extra protein and nutrients but doesn't change the delicious taste of the waffles.

  • 2 eggs
  • 1/4 cup melted butter
  • 1 3/4 cup milk
  • 1 Tablespoon sugar
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup cooked quinoa cooled
  1. Place eggs in a bowl. Mix with a whisk.
  2. Add melted butter, milk and sugar. Mix
  3. In a separate bowl mix flour, salt and baking powder together.

  4. Whisk egg mixture and slowly add flour mixture. Continue whisking until all flour is added.

  5. Stir in quinoa.
  6. Cook in a preheated waffle iron until waffles are done.
