Rhubarb Sauce

chopped rhubarb

Zest from one orange

Instructions
Put everything together in a sauce pan.
Bring to a boil. Reduce to a simmer.
Simmer 15-20 minutes until all rhubarb chunks have disappeared. The sauce will be the consistency of apple sauce or jam.
Place into a covered container and refrigerate.
Notes
Spoon over vanilla ice cream
Use in place of syrup on pancakes or waffles
Spoon over a bowl of oatmeal
Use like jam on a toasted English muffin.
