  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 3 Tablespoons olive oil
  • 2 Tablespoons sesame seeds
  • 1/2 teaspoon coarse salt
  1. In a large bowl combine flour and salt. Add the water and olive oil. Mix together until crumbly. 

  2. Form dough into a ball. Divide dough into thirds and cover dough with a clean towel.

  3. Working with one ball of dough at a time, roll out dough into a rectangular shape on a lightly floured surface. Roll dough to 1/16" thick.

  4. Brush dough lightly with water. Sprinkle sesame seeds and salt over top.

  5. Cut dough into 2" by 4" rectangular pieces using a pastry or pizza wheel. 

  6. Place cut crackers on an ungreased baking sheet. 

  7. Bake in a 450 degree oven for approximately 10 minutes or until lightly browned.

  8. Cool on a baking rack.

  9. Repeat with remaining dough. 

  10. Store crackers in a air tight container. If crackers lose their crispness, simply reheat for 3-5 minutes in a hot oven.

Other toppings to try: poppy seeds, caraway seeds, cracked black pepper, or rosemary.
