Rustic cracker with your choice of toppings.
In a large bowl combine flour and salt. Add the water and olive oil. Mix together until crumbly.
Form dough into a ball. Divide dough into thirds and cover dough with a clean towel.
Working with one ball of dough at a time, roll out dough into a rectangular shape on a lightly floured surface. Roll dough to 1/16" thick.
Brush dough lightly with water. Sprinkle sesame seeds and salt over top.
Cut dough into 2" by 4" rectangular pieces using a pastry or pizza wheel.
Place cut crackers on an ungreased baking sheet.
Bake in a 450 degree oven for approximately 10 minutes or until lightly browned.
Cool on a baking rack.
Repeat with remaining dough.
Store crackers in a air tight container. If crackers lose their crispness, simply reheat for 3-5 minutes in a hot oven.
Other toppings to try: poppy seeds, caraway seeds, cracked black pepper, or rosemary.
