Instructions
Preheat oven to 450°
Slice bread and rub both sides with olive oil.
Place on baking sheets and bake for 5-7 minutes. No need to flip the bread - both sides will become toasted.
Allow bread to cool slightly
Spread goat cheese on one side
Top with caramelized onions
Sprinkle with a bit of sea salt and freshly chopped parsley
Notes
Substitutions and Variations:
Toast bread outside on a grill over medium high heat. Keep a close eye on the bread because it can burn quickly
Use an herbed cream cheese in place of the goat cheese
Add a pepper jelly or an onion jam in place of the caramelized onions
Add a bit of fresh thyme instead of fresh parsley
Tips:
Choose a smaller baguette style of french bread. The smaller size is perfect for appetizers
Caramelized onions are best if they are warmed just slightly
Keep a close eye on your bread. You don't want it to burn
Bread can be toasted ahead of time. Allow to fully cool and store in an airtight storage container or bag.
