Tart cranberries with a shortbread crust and toasted almonds

Ingredients
Crust
  • 1 1/4 cups flour
  • 3/4 cup sugar
  • 1/2 cup butter
  • 1/2 cup almonds toasted
Filling
  • 1 cup sugar
  • 2 whole eggs
  • 2 Tablespoons milk
  • 1 Tablespoon finely shredded orange peel
  • 1 teaspoon vanilla
  • 2 cups whole cranberries
  • 1/3 cup sliced almonds
Instructions
  1. In a food processor, put flour, sugar, butter and toasted almonds.
  2. Pulse until the mixture is crumbly and the butter is incorporated throughout.
  3. Pour mixture into a 9x13 baking dish. Flatten dough with hands.
  4. Bake in a preheated 350 degree oven for 10 minutes.
  5. Meanwhile, in the same bowl, add sugar, eggs, milk, orange peel vanilla, and cranberries.
  6. Pulse into ingredients are mixed and cranberries are finely chopped.
  7. Pour filling over hot crust.
  8. Sprinkle sliced almonds on top.
  9. Return to oven and bake for 30 minutes.
  10. Let cool before slicing.
