  • 4 Tablespoons butter melted
  • 3/4 Cup sugar
  • 1/2 Cup milk
  • 2 whole eggs
  • 1 Tablespoon lemon zest
  • 2 Tablespoons lemon juice
  • 2 1/4 cups flour
  • 2 teaspoons baking powder
  • 1 cup blueberries
  1. In a mixing bowl combine butter and sugar.
  2. Add milk, eggs, lemon zest and lemon juice. Mix until combined.
  3. Add flour and baking powder. Mix until combined.
  4. With a spatula gently fold blueberries into mixture.
  5. Pour mixture into a greased loaf pan.
  6. Bake at 350 for 60 minutes.
  7. Check for doneness with a toothpick inserted in the center.
  8. Remove from oven and let cool in pan on a cooling rack for 15 minutes.
  9. Carefully remove from pan and continue cooling on rack.
Recipe Notes

Can use fresh or frozen blueberries.
If adding frozen, do not thaw before adding.
Cooking time might be increased when using frozen berries.
