Sheet Pan Sausage, Peppers and Onions
One pan meal with Italian sausage, potatoes, peppers and onions.

Red potatoes
about 1 pound

Instructions
Preheat oven to 415°F
Cut potatoes into cubes.
4 Red potatoes
Place in a bowl and drizzle one tablespoon of olive oil over potatoes
2 tablespoons olive oil
Toss to coat
Place on a sheet pan lined with parchment paper or foil
Sprinkle with salt
Place in a preheated 415°F oven for 10 minutes
Cut peppers and onions into slices. Place in same bowl as you tossed the potatoes

Add one tablespoon olive oil, red pepper flakes, salt and pepper. Toss to coat

¼ teaspoon pepper
After 10 minutes, remove the pan from oven and add peppers, onions and sausgaes to the same pan.

5 Italian sausages,
2 tablespoons olive oil
Reduce oven to 400°F
Sprinkle everything with fresh thyme
3 sprigs fresh thyme
Return pan to the oven for 30-35 minutes until sausages reaches at least 165°F and potatoes are cooked through
Serve hot
Notes
Lining the sheet pan is completely optional. However, it does make clean up easy peasy!
Cut potatoes in bite sized pieces. If too large, they take longer to cook.
Keep peppers and onion slices a consistent size
Spread everything out on pan as much as possible. Try not to make too big of piles.
You can add additional sausage or peppers and onions if desired. If pan gets too crowded, it will take longer to cook.
Divide into two pans if doubling the recipe
Top with a few sprigs of fresh thyme as a garnish
Serve directly on the sheet pan, or remove everything and serve on a platter
