Instructions
Slice rolls in half and spread mayonnaise on inside of rolls
4 crusty rolls, ¼ cup mayonnaise
Place olive oil in a large pan over medium heat. Add peppers and onions and cook for 3-5 minutes until beginning to soften.
1 tablespoon olive oil, 2 bell peppers, 1 onion
Add chicken strips and seasoning. Continue cooking until chicken cooks through, about 5-7 minutes.
1 pound chicken breast, ½ teaspoon salt, ¼ teaspoon pepper, ¼ teaspoon Italian seasoning
Roughly divide mixture into 4 sections just by moving around in the pan. Place a piece of cheese over each section.
4 slices provolone cheese
Let cheese melt for about 1 minute and then use a spatula to scoop out mixture and place in prepared rolls
Serve hot
Notes
Slice peppers and onions about the same thickness
Slice chicken into ½ inch strips
You can toast the inside of your buns if you prefer. Slice open buns and place in a preheated 400°F oven for 3-5 minutes until buns are slightly toasted
Feel free to omit the bun altogether and just enjoy on a plate and eat with a fork!
Any type of sliced cheese may be used instead of provolone
