mayonnaise

pickle relish

teaspoon
dijon mustard

Instructions
Place the cubed ham into a food processor. Pulse a few times until ham is finely chopped. Do not over work or ham will become a paste.
Place ham in a bowl along with mayonnaise, celery, pickle relish and dijon mustard. Stir lightly until combined.
Add to a sandwich or crackers or cover and refrigerate for up to 2 days.
Notes
Additional mayonnaise may be needed, depending on the dryness of your ham
If you don't have a food processor, you can finely mince the ham with a knife
