Finely dice onion, carrot and celery.
Saute onions, carrots and celery together with a bit of olive oil.
Add rice and stir to coat every grain with oil. Place rice mixture in a greased casserole dish.
Sprinkle chicken with salt, pepper and spices.
Place seasoned chicken on top of rice mixture. Carefully pour chicken broth over entire mixture.
Cover and bake in a 350 degree oven for about an hour.
