Pie Bars

A delicious little bar with a blackberry pie filling.

Make the Crust

Place flour, sugar and salt in food processor and mix. Add cold butter and pulse until combined. The dough will look dry.

Make the Crust

Squeeze the flour mixture together and it should hold the shape. Add to a greased baking dish, reserving 1 cup for the topping.

Make the Crust

Press down crust with your hands or the bottom of a flat measuring cup.

Make the Filling

Combine eggs, sour cream, sugar and corn starch.

Make the Filling

Add sugar, cinnamon, lemon juice and zest and vanilla.

Fold in blackberries

Assemble

Pour filling over unbaked crust. Top with a few extra berries and crumble remaining flour mixture over top. Bake for 1 hour in a 350 degree oven.

Cool

Allow bars to fully cool before slicing and serving.
