Baby Back Ribs

Create a dry rub by combining Brown Sugar Salt Pepper Garlic powder Paprika Ginger Rosemary

Remove silverskin from the underside of the ribs.

Prepare Ribs

Sprinkle ribs with salt and let sit for 10-15 minutes.

Cover ribs with dry rub and let ribs rest for another 15 minutes. 

Prepare a foil packet filled with wood chips.

Place foil bundle on grill under the grate.

Add ribs to indirect heat on grill. Close lid and cook at 250°F for 30 minutes.

Add another wood chip packet and cook for 2 hours. Rotate ribs on grill.

Test ribs by picking up on one end. If ribs begin to break apart, they are done.

Allow ribs to rest and then slice and serve.
