Five Ingredient Corn Salad

We have one more week of school, but in my mind, summer is already here! For me that means barbecues, picnics, pot lucks and finding dishes that don’t require cooking! This cold corn side dish fits the ticket! 

Corn Salad

This dish only uses 5 ingredients: Frozen corn, red onion, red bell pepper, fresh parsley and dressing. The dressing is ranch dressing.  Any kind will work; regular ranch, homemade ranch, jalapeno ranch, no-fat ranch, bacon ranch….you get the picture.

You pick your favorite ranch dressing and add to the other ingredients.  Voila!  You have an absolutely perfect side dish! My corn salad recipe is featured on Or So She Says.  I hope you check it out!

    Oooo…corn salad! This is a summertime staple for picnics. We make a similar salad, but with black beans and a vinaigrette dressing. I’m digging the ranch in this one. Totally making this one next time! đŸ™‚

    I’m up for any recipe that requires me to not turn on my stove and has 8 or fewer ingredients, this one fits the bill. I love corn salads, they are oh so refreshing and tasty.

      I love corn season. This salad can also be made with frozen corn for those times when you just can’t find good fresh corn.
